Start with a freshly cooked rotisserie chicken or two from the grocery store deli. They’re tender and juicy and since they’re not deep-fried, they’re not loaded with extra greasy calories. Of course, you need a salad and a couple of sides. Many grocery stores have salad bars where you can pick and choose from your favorite ingredients. Or you can grab a bag of salad greens and freshly cut carrots, broccoli, cauliflower and some baby tomatoes and you’re good to go. For your sides, check out the freezer section, where you’ll find all kinds of vegetables that you can steam in your microwave.
Once you get home, steam the veggies in the microwave, prepare the salad, carve the chicken and dinner’s ready. And healthy. The rotisserie chicken is a good source of protein and all the vegetables are rich in vitamins, minerals, fiber and phytochemicals that will keep you and your family healthy.
