Make a hot summer day seem a lot cooler by serving a big fresh salad. Start with a big bed of spinach, baby greens or lettuce and add your favorite sliced fruits and vegetables. Now you've got lots of fiber, vitamins, minerals and phytonutrients, all for just a few calories. Add some protein with cheese, hard-boiled eggs, nuts, seeds, lean chicken breast pieces or tuna chunks and top with a little bit of tasty dressing. You don't need as much of your protein sources, so keep serving sizes appropriate:
  • One serving of cheese is about the size of two dice.
  • One serving of meat, poultry or fish is about the size of a deck of cards.
  • One serving of dressing is two tablespoons.
If you have a variety of greens, sliced vegetables and precooked meats ready to go, it only takes a few minutes to assemble a healthy and delicious salad. And with so many fruits and vegetables to choose from, you can have a different salad every day with no extra effort.
