I love how easy one skillet meals are to prepare (and easy cleanup when dinner's over. There are lots of one skillet options. You can buy boxed mixes at the grocery store - just add meat, cook and stir, then serve - or use a recipe. The boxed one skillet meals are convenient, but you need to be careful with those mixes. They're usually loaded with sodium, fats and there isn't a vegetable in sight. You can make them healthier by choosing lean ground meats, tuna, toss in a few fresh or frozen vegetables and serve with a big side salad.

Or you can skip the box skillet meals and make your own fresh one skillet meals. Choose recipes that include lots of vegetables, use lean meats and don't have too much unhealthy saturated fat. Bonus points for using olive oil, including omega-3 rich fish and whole grains or brown rice.
